On Thursday 1st August Kiln welcomes Ben Ing and Kirsty Marchant from Alberta’s (Busselton/Undalup, WA) — formerly of Copenhagen’s noma, where Ben held the position of head chef, and Kirsty worked front-of-house before becoming head gardener until their return to Australia in 2021.
Ben and Mitch will pair up on a special menu for one night only, bringing together both Alberta’s and  Kiln dedication to the use of hyper seasonal and exceptional quality produce cooked simply, with punchy and umami flavours. 
At Alberta’s, Ben uses local South West ingredients to preserve, pickle, ferment, make vinegars and more. Some of these special items from the Alberta’s Pantry will make the journey to Sydney, complementing the New South Wales produce that Kiln is known for.
Kiln will work with leading bartenders on a curated cocktail menu designed collaboratively and featuring Evan Stroeve of Rhubi Mistelle (NSW) and Nick Tesar of Four Pillars Gin (VIC).
Not only are Evan and Nick the creative leads for two of Australia’s most unique spirit brands, they can both add Diageo World Class Australian Bartender of the Year, for 2021 and 2022 respectedly to their list of credentials. Additionally, Alberta’s will curate an optional 0% ABV pairing.
This is the first in a series of chefs dinners with friends – next up is in the series will be a modern take on Australia’s yum cha tradition with Trisha Greentree and Rosheen Kaul, and a dinner with Navi’s Julian Hill. Dates announced soon.
